  • 1 1/2 c. sugar
  • 1 c. Wesson oil
  • 3 eggs
  • 2 1/2 Tbsp. hot water
  • 1 1/2 c. flour
  • 1 tsp. baking powder
  • 1/2 tsp. soda
  • 1/4 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 1 c. grated raw carrots
  • 1 c. chopped nuts

    Combine sugar, Wesson oil, eggs and hot water in mixing bowl. Beat for 4 minutes. Sift dry ingredients together. Add to mixture and beat. Add carrots and nuts; mix well. Bake in greased and floured angel food pan at 350° for 55 minutes.
