  • 2 c. flour
  • 2 c. sugar
  • 3 c. carrots, shredded
  • 1 1/2 c. oil
  • 4 eggs
  • 1 tsp. salt
  • 2 tsp. cinnamon
  • 1 c. pecans, chopped

Directions

    Mix carrots, oil, eggs and sugar.

    Add pecans.

    Sift in salt, cinnamon and flour. Mix well.

    Pour into 9 x 13-inch pan. Bake 50 to 55 minutes at 350°.
