Carrot Cake

  • 2 scant c. sugar
  • 4 eggs
  • 1 1/2 c. Wesson oil
  • 2 tsp. soda, dissolved in buttermilk
  • 1/3 c. buttermilk
  • 3 c. sifted cake flour or all-purpose presifted
  • 1/4 tsp. salt
  • 1 tsp. cinnamon
  • 1 tsp. lemon extract
  • 1 tsp. vanilla
  • 3 c. grated carrots, finely grated (about 6 or 8)

Directions

    Mix salt and cinnamon with flour.

    Mix all in order, then add grated carrots.

    Pour into well-greased tube pan.

    Bake 2 hours at 300°.

    As soon as you remove cake from oven, add icing to cake in pan, then turn out onto plate and ice rest of cake.
