- 2 scant c. sugar
- 4 eggs
- 1 1/2 c. Wesson oil
- 2 tsp. soda, dissolved in buttermilk
- 1/3 c. buttermilk
- 3 c. sifted cake flour or all-purpose presifted
- 1/4 tsp. salt
- 1 tsp. cinnamon
- 1 tsp. lemon extract
- 1 tsp. vanilla
- 3 c. grated carrots, finely grated (about 6 or 8)
Directions

1Mix salt and cinnamon with flour.

2Mix all in order, then add grated carrots.

3Pour into well-greased tube pan.

4Bake 2 hours at 300°.

5As soon as you remove cake from oven, add icing to cake in pan, then turn out onto plate and ice rest of cake.
