Carrot Cake

Name: Carrot Cake
Ingredients: 2 scant c. sugar; 4 eggs; 1 1/2 c. Wesson oil; 2 tsp. soda, dissolved in buttermilk; 1/3 c. buttermilk; 3 c. sifted cake flour or all-purpose presifted; 1/4 tsp. salt; 1 tsp. cinnamon; 1 tsp. lemon extract; 1 tsp. vanilla; 3 c. grated carrots, finely grated (about 6 or 8)

2 tsp. soda, dissolved in buttermilk
1/3 c. buttermilk
3 c. sifted cake flour or all-purpose presifted
1/4 tsp. salt
1 tsp. cinnamon
1 tsp. lemon extract
1 tsp. vanilla
3 c. grated carrots, finely grated (about 6 or 8)

Mix salt and cinnamon with flour.

Mix all in order, then add grated carrots.

Pour into well-greased tube pan.

Bake 2 hours at 300°.

As soon as you remove cake from oven, add icing to cake in pan, then turn out onto plate and ice rest of cake.
