- 2 c. flour, sifted (plain)
- 2 tsp. baking powder
- 1 1/2 tsp. salt
- 1 1/2 tsp. baking soda
- 2 tsp. cinnamon
- 2 c. sugar
- 1 1/2 c. oil
- 4 eggs
- 2 c. finely grated carrots
- 1 (8 1/2 oz.) can crushed pineapple, drained
- 1/2 c. nuts, chopped
- 1 (3 1/2 oz.) can flaked coconut
Directions

1Sift together flour, baking powder, soda, salt and cinnamon. Add sugar, oil and eggs.

2Mix well.

3Add carrots, pineapple, nuts and coconut.

4Blend thoroughly.

5Pour into 3 (9-inch) layer pans or a 9 x 13-inch greased pan.

6Bake at 350° for 35 to 40 minutes in layer pans, 1 hour in 9 x 13-inch pan.

7Top with Cream Cheese Icing.
