- 1 c. vegetable oil
- 2 c. sugar
- 4 eggs
- 1 tsp. vanilla
- 3 drops black walnut flavoring
- 1/2 c. black walnuts, chopped fine
- 2 c. self-rising flour
- 2 c. shredded carrots
Directions

1Mix sugar and oil in mixing bowl; add eggs 1 at a time, mixing well after each egg.

2Add vanilla and walnut flavoring, carrots and chopped nuts and flour.

3Pour into well greased tube pan; bake 1 1/4 hours at 350° (do not open oven door as cake will fall). For best results, measure flour first, then sift 3 times.
