- 1 1/4 c. vegetable oil
- 2 c. sugar
- 2 c. flour, sifted
- 2 tsp. baking powder
- 1 tsp. baking soda
- 2 tsp. cinnamon
- 1 tsp. salt
- 4 eggs
- 3 c. grated raw carrots
- 1 c. finely chopped pecans
Directions

1Combine oil and sugar.

2Sift remaining dry ingredients.

3Sift 1/2 dry ingredients into sugar/oil mixture.

4Alternate remaining dry ingredients with eggs one at a time, mixing well after each addition.

5Add carrots and nuts; mix well.

6Pour into lightly oiled 10-inch tube or Bundt pan.

7Bake in slow oven (325°) about 1 hour and 10 minutes.

8Let cake cool slightly before removing from pan. When cool, frost with cream cheese or Caramel Frosting.
