  • 1 1/2 c. Crisco oil
  • 2 c. sugar
  • 4 whole eggs, unbeaten
  • 2 c. flour
  • 3 large carrots, grated
  • 3 tsp. cinnamon
  • 1 tsp. nutmeg
  • 1 tsp. cloves
  • pinch of salt
  • 2 tsp. baking powder

    Mix oil and sugar, beat well.

    Add eggs.

    Sift flour and spices with baking soda and salt.

    Add to sugar mixture.

    Add carrots, a little at a time, and mix.

    Bake in a greased and floured tube pan at 350° for 60 to 70 minutes until center is done.
