- 1 1/2 c. sugar
- 1 c. Wesson oil
- 3 egg yolks, unbeaten
- 2 1/2 Tbsp. hot water
- 1 1/2 c. flour
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1 tsp. nutmeg
- 1 tsp. cinnamon
- 1 c. fine grated carrots
- 1 c. nuts (black walnuts)
- 3 egg whites, stiffly beaten
Directions

1Sift flour and add dry ingredients.

2Mix dry ingredients alternately with sugar, oil, egg yolks and hot water.

3Mix the grated carrots, then the nuts to batter, then fold in the egg white.

4Bake in greased and floured tube pan at 350° for 55 minutes.

5Cool in pan 10 minutes.
