- 3 c. flour
- 2 c. sugar
- 2 tsp. baking soda
- 2 tsp. baking powder
- 1/4 tsp. salt
- 2 tsp. cinnamon
- 1 to 1 1/2 c. chopped nuts
- 1 lb. carrots, cleaned and peeled
- 4 eggs
- 1 1/2 c. oil
Directions

1Grate carrots or combine carrots, oil and eggs in blender and liquify.

2In large bowl combine flour, sugar, soda, powder, salt, cinnamon, nuts and carrot mixture.

3Mix well.

4Bake in tube pan in preheated 350° oven for 1 hour or until toothpick comes out clean when inserted in middle.

5Let cool and remove from pan.

6Sprinkle with powdered sugar or frost with chocolate frosting.
