Carrot Cake

Ingredients

  • 3 c. flour
  • 2 c. sugar
  • 2 tsp. baking soda
  • 2 tsp. baking powder
  • 1/4 tsp. salt
  • 2 tsp. cinnamon
  • 1 to 1 1/2 c. chopped nuts
  • 1 lb. carrots, cleaned and peeled
  • 4 eggs
  • 1 1/2 c. oil

Directions

    Grate carrots or combine carrots, oil and eggs in blender and liquify.

    In large bowl combine flour, sugar, soda, powder, salt, cinnamon, nuts and carrot mixture.

    Mix well.

    Bake in tube pan in preheated 350° oven for 1 hour or until toothpick comes out clean when inserted in middle.

    Let cool and remove from pan.

    Sprinkle with powdered sugar or frost with chocolate frosting.
