  • 1 1/2 c. white sugar
  • 3/4 c. Puritan oil
  • 1 stick butter
  • 2 whole eggs and 1 egg white, well beaten
  • 2 tsp. soda
  • 2 c. flour (always stir lightly before measuring)
  • 2 tsp. baking powder
  • 2 tsp. ground cinnamon
  • 1/2 tsp. salt
  • 1 c. chopped walnuts
  • 3 c. fresh grated carrots

    Mix sugar and salad oil together.

    Add well beaten eggs; mix well.

    Combine dry ingredients and stir in.

    Mix until smooth. Add chopped walnuts and grated carrots.

    Bake in 3 greased cake pans at 325° or Bundt cake pan about 30 minutes.

    Oil and lightly flour Bundt pan.
