- 1 1/2 c. oil
- 2 c. sugar
- 4 eggs
- 2 c. grated carrots
- 3 c. flour
- 2 tsp. baking soda
- 1/2 tsp. baking powder
- 3/4 tsp. salt
- 1 tsp. cinnamon
- 2 Tbsp. vanilla
- 1 c. chopped nuts
Directions

1Mix oil, sugar, eggs and vanilla.

2Beat well.

3Stir in sifted dry ingredients, then add carrots and nuts; mix by hand.

4Pour into Bundt pan or tube pan.

5Bake at 350° for 45 to 50 minutes.
