  • 2 1/2 c. flour
  • 1 c. brown sugar
  • 1 c. white sugar
  • 1 tsp. soda
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 1 Tbsp. cinnamon
  • 3 eggs
  • 1 tsp. vanilla
  • 1 can crushed pineapple
  • 2 c. shredded carrots
  • 1/2 c. chopped walnuts (optional)
  • 1/2 c. raisins (optional)

Directions

    Combine ingredients in large bowl.

    Use a 9 x 13-inch pan. Bake at 350° for 45 to 50 minutes, or until top springs back when touched lightly in center.
