  • 2 c. sugar
  • 1 c. crushed pineapple
  • 1 c. coconut
  • 1 1/2 c. shredded carrots
  • 2 1/2 c. flour
  • 2 tsp. soda
  • 1 tsp. nutmeg
  • 1 tsp. cinnamon
  • 1 tsp. salt
  • 1 c. chopped walnuts or pecans
  • 2 tsp. vanilla extract
