- 2 c. sugar
- 1 c. oil
- 2 c. flour
- 2 tsp. cinnamon
- 2 tsp. baking soda
- 2 tsp. baking powder
- 1 tsp. salt
- 4 unbeaten eggs
- 2 c. shredded carrots
- 1 c. chopped walnuts
Directions

1Mix sugar and oil and beat with electric mixer in large bowl until light.

2Mix together dry ingredients and add, alternating with egg, to the sugar and oil mixture.

3Beat well after each addition.

4With a wooden spoon, stir in carrots and nuts.

5Bake in a 9-inch tube pan at 350° for 1 hour.
