  • 1 1/2 c. cooking oil
  • 2 c. sugar
  • 4 egg yolks
  • 1 Tbsp. cinnamon
  • 1 1/2 c. grated carrots
  • 2 1/2 c. self rising flour
  • 2/3 c. nuts
  • 4 egg whites stiffly beaten
  • 4 Tbsp. hot water

Directions

    Mix all ingredients, mixing egg whites in last.

    Pour into three 9 inch cake pans.

    Bake 30-35 minutes in a 350° oven.
