  • 2 c. flour
  • 2 tsp. baking soda
  • 2 tsp. cinnamon
  • 1/4 c. cooking oil
  • 4 eggs
  • 2 Tbsp. baking powder
  • 1 tsp. salt
  • 2 c. sugar
  • 3 c. raw carrots, grated
  • 1/2 c. nuts

    Mix oil and sugar.

    Add eggs and beat until creamy.

    Add sifted dry ingredients and mix well.

    Add carrots and nuts.

    Pour into greased and floured 9 x 13-inch cake pan and bake at 300° for 1 hour.

    Frost with Cream Cheese Frosting.
