  • 3 c. self-rising flour
  • 2 c. sugar
  • 2 c. grated carrots
  • 1 1/2 c. Wesson oil
  • 1 c. pecans, cut fine
  • 4 eggs
  • 1 tsp. cinnamon
  • 1/8 tsp. salt

Directions

    Pour oil in bowl.

    Sift flour, sugar, spice and salt together. Add 1/2 part of this and 1 egg at a time until all is used.

    Add nuts and carrots.

    Bake 1 hour and 15 minutes at 325° in tube pan.
