- 2 c. sugar
- 2 c. flour
- 1 tsp. salt
- 2 tsp. cinnamon
- 2 tsp. soda
- 4 large or 6 small eggs
- 1 1/2 c. vegetable oil
- 2 c. grated carrots
- 1/2 c. chopped walnuts
Directions

1Preheat oven to 350°.

2Grease or spray a 9 x 13-inch pan. Sift all ingredients into a large bowl.

3Beat eggs and oil together.

4Stir eggs into dry ingredients and stir together.

5Add carrots and nuts and stir well.

6Bake 35 to 45 minutes.

7Test doneness with toothpick in center of cake.

8Use a cream cheese frosting on cooled cake.
