- 2 c. self-rising flour
- 3 c. carrots, shredded
- 1 c. nuts
- 1 Tbsp. cinnamon
- 4 eggs
- 1 tsp. vanilla
- 1 pkg. 10xx sugar
- 1 1/4 c. vegetable oil
- 10 oz. cream cheese
Directions

1Mix sugar, flour and cinnamon together. Add carrots. Add eggs, one at a time. Add vanilla and oil. Mix until combined. Add 1/2 cup of nuts and bake at 350° for 1 hour or until well done. Let cool until frosting is ready.
