  • 2 c. sugar
  • 2 c. self-rising flour
  • 3 c. carrots, shredded
  • 1 c. nuts
  • 1 Tbsp. cinnamon
  • 4 eggs
  • 1 tsp. vanilla
  • 1 pkg. 10xx sugar
  • 1 1/4 c. vegetable oil
  • 10 oz. cream cheese

Directions

    Mix sugar, flour and cinnamon together. Add carrots. Add eggs, one at a time. Add vanilla and oil. Mix until combined. Add 1/2 cup of nuts and bake at 350° for 1 hour or until well done. Let cool until frosting is ready.
