  • 2 c. sugar
  • 1 tsp. vanilla
  • 1 1/2 c. oil
  • 4 eggs
  • 2 c. self-rising flour
  • 1/2 tsp. baking soda
  • 1 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 1/2 tsp. allspice
  • 3 c. finely grated carrots
  • 2 c. chopped nuts (pecans and walnuts)

Directions

    Combine sugar, vanilla, oil and eggs; mix well and add flour. Combine remaining ingredients.

    Mix all together and bake in a 13 x 9 x 2-inch pan for 30 minutes at 350°.
