  • 1 1/2 c. vegetable oil
  • 2 c. sugar
  • 4 eggs, well beaten
  • 2 c. sifted flour
  • 1 tsp. salt
  • 2 tsp. soda
  • 1 tsp. cinnamon
  • 2 tsp. baking powder
  • 1 c. chopped nuts
  • 3 c. grated carrots (1 lb.)

    Beat oil with sugar.

    Blend in beaten eggs.

    Sift dry ingredients.

    Add to first mixture.

    Add nuts and carrots, small amount at a time.

    Blend well.

    Bake in three greased pans or 10-inch tube pan or sheet pan at 350° for 40 minutes to 1 hour, depending on thickness of pan.
