- 1 1/2 c. vegetable oil
- 2 c. sugar
- 4 eggs, well beaten
- 2 c. sifted flour
- 1 tsp. salt
- 2 tsp. soda
- 1 tsp. cinnamon
- 2 tsp. baking powder
- 1 c. chopped nuts
- 3 c. grated carrots (1 lb.)
Directions

1Beat oil with sugar.

2Blend in beaten eggs.

3Sift dry ingredients.

4Add to first mixture.

5Add nuts and carrots, small amount at a time.

6Blend well.

7Bake in three greased pans or 10-inch tube pan or sheet pan at 350° for 40 minutes to 1 hour, depending on thickness of pan.
