- 2 c. sugar
- 2 c. flour
- 1 c. oil
- 2 tsp. cinnamon
- 4 eggs
- 3 c. grated carrots (grate carrots and set aside)
- 1/2 c. chopped pecans
Directions

1Preheat oven to 350°.

2Sift sugar, flour and cinnamon together.

3Add oil and eggs.

4Mix well.

5Add carrots.

6Mix well. Fold in pecans.

7Bake approximately 45 minutes until you can insert a toothpick, and it comes out clean.

8Bake in two 9-inch pans or three 8-inch pans or one 13-inch oblong pan.
