- 1 1/2 c. Wesson oil
- 4 egg yolks
- 3 1/2 Tbsp. hot water
- 4 egg whites, stiffly beaten
- 1 c. chopped pecans
- 2 c. sugar
- 2 c. grated carrots
- 2 1/2 c. flour
- 1/2 tsp. nutmeg
Directions

1Mix oil, nuts, sugar, carrots, egg yolks and hot water.

2Sift together dry ingredients and combine with others.

3Fold in egg whites.

4Bake in a tube pan at 325° for 1 hour.

5Combine 1 cup sugar and 1 cup orange juice.

6Bring to a boil.

7Pour over cooled cake.
