  • 1 3/4 c. granulated sugar
  • 1 1/2 c. vegetable oil
  • 4 eggs
  • 1 tsp. salt
  • 3 c. carrots (finely grated)
  • 2 c. all-purpose flour
  • 2 tsp. baking soda
  • 2 tsp. ground cinnamon

Directions

    Cream sugar and oil.

    Add eggs one at a time.

    Add carrots and dry ingredients and mix well.

    Pour batter into a greased and floured pan and bake at 350° for 45 minutes.

    Frost with cream cheese frosting.
