- 3 eggs, beaten
- 3/4 c. vegetable oil
- 3/4 c. buttermilk
- 2 c. sugar
- 2 tsp. vanilla extract
- 2 c. all-purpose flour
- 2 tsp. baking soda
- 1/2 tsp. salt
- 1 can (8 oz.) crushed pineapple, undrained
- 2 c. grated carrots
- 1 c. raisins
- 1 c. chopped nuts
- 1 c. flaked coconut
Directions

1In a mixing bowl, combine eggs, oil, buttermilk, sugar and vanilla; mix well.

2Combine flour, cinnamon, baking soda and salt; stir into egg mixture.

3Stir in pineapple, carrots, raisins, nuts and coconut.

4Pour into a greased and floured 13 x 9 x 2-inch baking pan.

5Bake at 350° for 50 to 55 minutes, or until cake tests done.

6Do not overbake.

7Remove to a wire rack to cool.
