  • 2 c. sugar
  • 4 eggs
  • 1 tsp. vanilla
  • 1 tsp. salt
  • 1 c. oil
  • 3 jars (4 or 4 1/2 oz.) strained carrots (baby food)
  • 2 c. unsifted flour
  • 2 tsp. baking soda
  • 2 tsp. cinnamon
  • 1 (20 oz.) can crushed pineapple (well drained)
  • 1 c. chopped walnuts
  • 1 c. white raisins

    Beat together sugar, eggs, vanilla and salt.

    Add oil; beat well.

    Add strained carrots and mix well.

    Add flour, baking soda and cinnamon.

    Beat 4 minutes.

    Add pineapple, walnuts and raisins.

    Pour into greased and floured loaf cake pan and bake at 375° for about 40 to 45 minutes.
