- 3 c. grated carrots
- 2 c. flour
- 2 tsp. baking soda
- 1 tsp. baking powder
- 1 tsp. cinnamon
- 1/2 tsp. salt
- 4 eggs, well beaten
- 1 tsp. vanilla
- 1/2 c. chopped nuts (optional)
- 1/2 c. white raisins (optional)
Directions

1Combine first six ingredients.

2Stir in eggs, oil and vanilla and mix well.

3Put batter in three 9-inch baking pans and bake at 350° for 30 minutes.

4Let cake cool thoroughly and sprinkle with powdered sugar.
