  • 3 c. grated carrots
  • 2 c. flour
  • 2 tsp. baking soda
  • 1 tsp. baking powder
  • 1 tsp. cinnamon
  • 1/2 tsp. salt
  • 4 eggs, well beaten
  • 1 tsp. vanilla
  • 1/2 c. chopped nuts (optional)
  • 1/2 c. white raisins (optional)

Directions

    Combine first six ingredients.

    Stir in eggs, oil and vanilla and mix well.

    Put batter in three 9-inch baking pans and bake at 350° for 30 minutes.

    Let cake cool thoroughly and sprinkle with powdered sugar.
