- 1 c. margarine
- 1 1/2 c. sugar
- 1 (8 oz.) can crushed pineapple with juice
- 1 1/2 c. flour (all-purpose)
- 1/2 c. whole wheat flour
- 2 tsp. cinnamon
- 2 tsp. soda
- 3 c. carrots, grated
- 1/2 c. chopped walnuts
- 4 egg whites
- 1 tsp. vanilla
Directions

1In a mixing bowl, cream margarine and sugar.

2Beat in egg whites.

3Stir in pineapple and vanilla.

4Stir together flours, cinnamon and soda.

5Stir into liquid ingredients and beat well. Fold in carrots and nuts.

6Pour into a nonstick sprayed 9 x 13-inch baking pan or Bundt pan.

7Bake at 325° for 60 minutes.
