- 1 1/2 c. oil
- 2 c. sugar
- 4 large eggs
- 2 c. flour
- 2 tsp. cinnamon
- 2 tsp. soda
- 2 tsp. baking powder
- 1 tsp. salt
- 1 c. pecans, chopped
- 3 c. grated carrots
- 1 c. crushed pineapple
- 1 stick oleo, softened
- 8 oz. cream cheese, softened
- 1 tsp. vanilla
- 1 lb. box powdered sugar
Directions

1Mix oil and sugar; add eggs, one at a time.

2Sift together flour, soda, baking powder, cinnamon and salt.

3Add dry mixture in small amounts to egg mixture until all ingredients are well blended. Add vanilla.

4Blend in carrots, pineapple and pecans. Bake in 3 greased and floured 9-inch pans at 350° for 30 to 40 minutes.

5Check at 25 minutes.

6Ice with Cream Cheese Frosting.
