- 1 1/2 c. corn oil
- 1 3/4 c. sugar
- 3 eggs
- 2 c. flour
- 2 tsp. baking soda
- 1 tsp. salt
- 2 1/2 tsp. cinnamon
- 2 c. grated carrots
- 1 c. walnuts
- 1/2 c. flaked coconut
- 1 (8 oz.) can crushed pineapple, drained
- 1 1/2 tsp. vanilla
Directions

1Beat together oil, sugar and eggs.

2Mix flour, baking soda, salt and cinnamon together.

3Add to sugar and egg mixture and beat.

4Add vanilla; mix grated carrots, walnuts, flaked coconut and crushed pineapple.

5Add to mixture; blend well.

6Pour batter in a greased and floured Bundt pan.

7Bake at 350° for 1 hour or until tester comes clean.

8Cool on cake rack.

9Remove from pan.
