Ingredients

  • 2 c. flour
  • 1 tsp. baking soda
  • 2 tsp. baking powder
  • 2 tsp. cinnamon
  • 1/2 tsp. salt
  • 2 c. sugar
  • 1 1/2 c. oil
  • 3 eggs
  • 2 c. finely grated carrots
  • 1 c. drained crushed pineapple (drain it well)
  • 1 c. coconut
  • 1 tsp. vanilla

Directions

    Beat the sugar, oil and eggs with a mixer.

    Add dry ingredients.

    Fold in the carrots, pineapple, coconut and nuts. Also add vanilla.

    Bake in greased and floured 13 x 9-inch pan or glass dish (I use a Bundt pan) at 350° for 1 hour.

    Frost with cream cheese frosting, Cool Whip or whatever you like.
