- 3 eggs
- 2 c. sugar
- 1 1/4 c. vegetable oil
- 3 c. all-purpose flour
- 2 tsp. baking soda
- 2 tsp. cinnamon
- 1 1/2 c. carrots, grated
- 1 c. chopped pecans
- 1 (20 oz.) can crushed pineapple
- 2 tsp. vanilla
- 1 tsp. salt
Directions

1Combine eggs, sugar and oil in a large bowl.

2Beat well. Combine flour, salt, soda and cinnamon and add to sugar mixture. Mix well.

3Stir in carrots, pecans, pineapple and vanilla.

4Bake at 350° for 1 hour and 15 minutes.
