  • 1 c. Crisco oil
  • 2 c. sugar
  • 4 eggs
  • 1 tsp. vanilla
  • 2 c. carrots, finely grated
  • 1 small can pineapple with juice
  • 1 c. chopped pecans
  • 3 c. flour, sifted
  • 3 tsp. baking powder
  • 1/2 tsp. salt
  • 1 tsp. soda
  • 1 tsp. cinnamon

    Cream sugar and oil; beat in eggs.

    Measure and blend dry ingredients together.

    Add to sugar, oil and eggs.

    Fold in pineapple with juice, vanilla, carrots and nuts.

    Bake in 3 (9-inch) pans at 350° until done when tested with toothpick.
