- 2 c. sugar
- 4 eggs
- 1 tsp. vanilla
- 2 c. carrots, finely grated
- 1 small can pineapple with juice
- 1 c. chopped pecans
- 3 c. flour, sifted
- 3 tsp. baking powder
- 1/2 tsp. salt
- 1 tsp. soda
- 1 tsp. cinnamon
Directions

1Cream sugar and oil; beat in eggs.

2Measure and blend dry ingredients together.

3Add to sugar, oil and eggs.

4Fold in pineapple with juice, vanilla, carrots and nuts.

5Bake in 3 (9-inch) pans at 350° until done when tested with toothpick.
