- 1 c. grated carrots
- 1 c. chopped walnuts
- 1 c. whole wheat flour
- 1/2 c. plus 2 Tbsp. honey
- 1 tsp. cinnamon
- 6 eggs
- 1 (8 oz.) cream cheese
- 1 Tbsp. lemon juice
- 1 tsp. orange peel, grated fine
Directions

1Separate eggs, beat yolks and honey until light and creamy. Add carrots, nuts, flour and cinnamon.

2Beat egg whites until stiff.

3Fold into mixture.

4Pour into 9 x 9-inch glass baking dish. Bake 45 minutes at 350°.

5When cool, top with mixture of softened cream cheese mixed with lemon and orange.
