- 1 c. sugar
- 1/2 c. Wesson oil
- 1 1/2 c. sifted plain flour
- 1/2 tsp. soda
- 1/4 tsp. salt
- 1 tsp. cinnamon
- 1 c. grated carrots
- 2 eggs
- 1/2 c. chopped nuts
Directions

1Heat oven to 350°.

2Mix sugar and oil.

3Add sifted dry ingredients and carrots.

4Add eggs, one at a time, beating well after each addition.

5Add nuts and blend well.

6Pour into oiled loaf pan.

7Bake for 55 to 60 minutes.

8Cover cake with foil during first 20 minutes of baking to prevent cracking.
