  • 1 1/2 c. oil
  • 4 eggs
  • 2 c. sugar
  • 1 tsp. vanilla
  • 1 lb. shredded carrots
  • 1 c. nuts
  • 2 c. flour
  • 2 tsp. baking soda
  • 2 tsp. baking powder
  • 1 tsp. salt

Directions

    Mix oil, eggs, sugar, vanilla and carrots thoroughly. Add salt, baking soda and baking powder, then mix in flour.

    Nuts can be added last. Bake at 350° for 45 minutes to 1 hour in greased and floured pan.
