  • 2 c. sugar
  • 1 1/4 c. cooking oil
  • 4 whole eggs
  • 2 c. plain flour (do not sift)
  • 2 tsp. baking soda
  • 1 tsp. salt
  • 2 tsp. cinnamon
  • 1/2 c. chopped nuts
  • 3 c. grated carrots
  • 1 small flat can crushed pineapple

Directions

    Beat sugar and oil, then add eggs, one at a time, mixing well after each.

    Add the rest of ingredients to mixture and mix well. Bake 40 minutes at 325° in three greased and floured 8-inch cake pans.
