- 2 c. flour
- 1 1/4 c. oil
- 4 eggs, lightly beaten
- 1/2 c. chopped walnuts (optional)
- 3 c. grated carrots
- 1 1/4 tsp. baking soda
- 2 tsp. cinnamon
- 1 tsp. salt
- 2/3 grated rind of 1 orange (use leftover 1/3 in Cream Cheese Frosting)
