  • 2 c. sugar
  • 2 c. flour
  • 1 1/4 c. oil
  • 4 eggs, lightly beaten
  • 1/2 c. chopped walnuts (optional)
  • 3 c. grated carrots
  • 1 1/4 tsp. baking soda
  • 2 tsp. cinnamon
  • 1 tsp. salt
  • 2/3 grated rind of 1 orange (use leftover 1/3 in Cream Cheese Frosting)

    Add flour (with soda, cinnamon and salt)

    alternately with eggs.

    Add grated carrots, orange rind and walnuts.

    and floured 9 x 13-inch oblong pan (a loaf or Bundt pan, if you prefer).
