Carrot Cake

Ingredients

  • 1 1/2 c. oil
  • 2 c. sugar
  • 4 egg yolks (beat separately first)
  • 2 c. grated carrot
  • 4 Tbsp. hot water
  • 1/2 c. chopped nuts
  • 2 1/2 tsp. cinnamon
  • 2 1/4 c. flour
  • 1 1/2 tsp. nutmeg
  • 1 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 4 egg whites (beaten until stiff)

Directions

    Mix oil and sugar; add egg yolks.

    Mix carrots and water; add to mixture.

    Sift flour with cinnamon, nutmeg, baking soda and salt; add to mixture.

    Add nuts.

    Fold in beaten egg whites.

    Pour in greased and floured 13 x 9-inch pan.

    Bake 1 1/2 hours at 350°. Cool.

    Frost with Cream Cheese Frosting and store in refrigerator.
