  • 2 c. sugar
  • 2 c. flour
  • 2 tsp. soda
  • 1 1/4 c. Wesson oil
  • 1 c. pecans, chopped
  • 1 tsp. salt
  • 2 tsp. cinnamon
  • 4 eggs
  • 2 c. grated carrots
  • small crushed pineapple

Directions

    Mix all dry ingredients.

    Beat eggs and oil; add to dry ingredients and mix well.

    Add carrots, pecans and pineapple. Bake at 350° for 30 minutes, or until brown.
