- 2 c. self-rising flour
- 2 c. sugar
- 1 tsp. nutmeg
- 1 tsp. cinnamon
- 4 eggs
- 3/4 c. salad oil
- 1 tsp. vanilla
- 3 c. grated carrots
- 1 c. chopped walnuts
Directions

1Sift the first 4 ingredients together.

2Mix remaining ingredients together.

3Add eggs, oil and vanilla to dry mixture. Blend with mixer for about 3 minutes on medium.

4Stir in carrots and walnuts.

5Bake in 3 (9-inch) pans that have been greased and floured.

6Bake in a 350° oven for 30 minutes.

7Cool in pans 10 minutes.

8Cool completely before frosting.
