- 4 eggs
- 2 c. sugar
- 1 1/2 c. oil
- 2 c. flour
- 1 tsp. cinnamon
- 1/2 tsp. salt
- 1 tsp. soda
- 1 tsp. vanilla
- 3 c. grated carrots
- 1 c. chopped nuts
Directions

1Beat eggs, oil and sugar.

2Mix well.

3Add vanilla.

4Sift and stir dry ingredients.

5Blend into the oil, eggs, sugar mixture. Stir in the carrots and nuts.

6Pour mixture into a greased and floured 10 inch round or spring form pan.

7Bake at 350° for 30 to 40 minutes.
