  • 1 3/4 c. sugar
  • 2 tsp. cinnamon or nutmeg
  • 2 c. flour
  • 4 unbeaten eggs
  • 1 1/4 c. oil
  • 3 c. grated carrots

    Cream sugar, oil and eggs 1 at a time. Sift together flour and cinnamon. Add flour and carrots to batter. Bake in 3 layers at 350° about 30 to 35 minutes.
