  • fresh breadcrumb
  • 2 tablespoons chopped flat leaf parsley
  • 1 tablespoon oregano
  • 4 chicken thighs, fillets (600 grams)
  • 2 tablespoons plain flour
  • 2 eggs
  • 14 cup olive oil, 60ml
  • 700 g pasta sauce
  • 12 cup parmesan cheese, grated
  • 12 cup mozzarella cheese

    Preheat oven to 200C or 180C fan forced.

    Lightly grease a 6-cup capacity baking dish.

    Combine breadcrumbs and herbs.
  4. 4
    Toss chicken in flour, shaking off any excess.

    Dip in egg and breadcrumbs, pressing to coat.

    Heat oil in large frying pan on medium heat, cook chicken in batches for 1-2 minutes each side, till browned all over.

    Pour 3/4 cup pasta sauce into the base of prepared dish.

    Top with half the chicken 1 cup of pasta sauce and half the parmesan, then remaining chicken, pasta sauce and parmesan.

    scatter black olives if using, and mozarella.

    Season and bake for 30mins until cheese is bubbling and golden.

    Serve with salad.
