- 2 c. sifted cake flour
- 1 tsp. salt
- 4 eggs
- 1 c. salad oil
- 2 tsp. cinnamon
- 1 tsp. soda
- 3 c. grated carrots
Directions

1Preheat oven to 350°.

2Grate carrots.

3Pour oil over carrots and lightly toss.

4Sift all dry ingredients in a large bowl.

5Add eggs, 1 at a time, mixing by hand until well blended.

6Add carrots to flour mixture and mix well by hand.

7Spoon into three 8-inch ungreased pans.

8Bake until lightly browned.

9Do not overbake. Remove from pans and cool on racks.

10Frost with Cream Cheese Frosting.
