- 2 c. sugar
- 1 1/2 c. oil
- 4 eggs
- 1 1/4 c. flour
- 2 tsp. salt
- 2 tsp. soda
- 2 tsp. cinnamon
- 3 c. grated carrots
- 1 1/2 c. chopped nuts
Directions

1Preheat oven to 300°.

2Combine sugar, oil and eggs. Beat at medium speed for 2 minutes. Add dry ingredients and beat at low speed for 1 minute.

3Stir in grated carrots and nuts. Spread in a greased and floured 9 x 13-inch pan. Bake about 1 hour or until cake tests done with a toothpick.

4Frost with Cream Cheese Frosting.
