- 1 1/2 c. cooking oil
- 2 c. sugar
- 2 tsp. cinnamon
- 2 tsp. vanilla
- 1 tsp. salt
- 4 eggs
- 2 1/4 c. flour
- 2 tsp. baking soda
- 1 (8 oz.) can crushed pineapple
- 2 c. shredded coconut
- 2 c. shredded carrots
- 1 c. chopped nuts
- 1 c. raisins
Directions

1Combine cooking oil, sugar, cinnamon, vanilla and salt and blend well.

2Add eggs and beat well.

3Add flour, baking soda and crushed pineapple (undrained), blending well.

4Fold in carrots, coconut, raisins and nuts.

5Blend well.

6Pour into 3 (9-inch) round cake pans.

7Bake in preheated 350° oven for 45 to 55 minutes.
