  • 2 c. flour
  • 1 tsp. salt (optional)
  • 3 c. grated carrots
  • 2 tsp. cinnamon
  • 1/2 c. chopped nuts
  • 2 tsp. baking soda
  • 1 1/2 c. oil
  • 2 tsp. baking powder
  • 2 c. sugar
  • 4 eggs

    Sift dry ingredients.

    Cream sugar and oil.

    Mix rest of ingredients, except eggs.

    Add eggs, one at a time.

    Mix well. Bake in a greased 13 x 9-inch pan at 350° for 35 minutes.

    Cool and frost with cream cheese frosting.
