- 1 c. flour
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1 tsp. cinnamon
- 1/2 tsp. salt
- 2/3 c. vegetable oil
- 1 c. sugar
- 2 beaten eggs
- 1 1/2 c. grated carrots
- 1/2 c. chopped nuts
Directions

1Sift dry ingredients into mixing bowl.

2Mix together the oil, sugar and eggs and add to dry ingredients.

3Blend well.

4Add carrots and nuts, stirring to blend.

5Bake at 325° in a greased and floured 8-inch square pan.

6Frost with cream cheese icing.
