- 1 1/2 c. oil
- 2 c. sugar
- 4 eggs
- 2 c. flour
- 2 tsp. baking powder
- 2 tsp. baking soda
- 2 tsp. cinnamon
- 1/2 tsp. salt
- 3 c. grated carrots
- 1 c. nuts (walnuts)
Directions

1Blend oil in sugar; mix in the eggs until frothy.

2Sift together dry ingredients and add to mixture.

3Mix in carrots and nuts.

4Pour in a 13 x 9-inch pan.

5Bake at 325° for 1 hour.

6Cool in pan on rack.

7Use cream cheese icing or vanilla icing.
